The caption writes, "Here a mycologist of the Bureau of Chemistry and Soils puts molds to work to extract chemicals from agricultural products. Citric acid, lactic acid, glyconic acid, and kojic acid, all of which have industrial value, have already been produced from certain of the farmer's crops by this means."
