This is an original 1878 one-page print article about the Pictet system of refrigeration applied to Breweries and Storage-rooms. This article explains how the cold is distributed by circulating cold water or brine. The first is used when it is important to keep the temperature low, but always above the freezing point; while brine can be cooled much lower; and is used where it is intended to lower the temperature as much as practicable. The general arrangement is represented in this engraving; on the level of the ground, and near the fermenting room, is an ice-machine; one-half of the tank may be occupied by cans for making ice, and in the other half are placed sheet-iron boxes from 8 to 12 inches wide, 6 to 10 feet long, and about 3 feet deep. These boxes are filled with water, and connect with each other by means of overflow pipes or else by large siphon pipes. The water in the boxes in the tank is rendered so cold by the action of the refrigeration liquid which bathes their sides, that is has a strong tendency to freeze.
