This is an original 1945 color print of a worker at Swift & Company of Chicago, Illinois preparing T-bone for overseas military troops during World War II. The caption writes, "The only steak that doesn't come with 3-way [roasting, stewing, chopped] is a T-bone, and that is because skilled workers like the one above at Swift & Co.'s Chicago plant are required to take out all the bones."
